Sherry Vinegar is a gourmet wine vinegar made from Sherry. Stocks have been certified since its origin (D.O.P. Jerez-Xérès-Sherry) and have been selected according to acidity (the maximum acidity level in natural vinagers) and the peculiar scent which is also unique due to the grape features and, above all, to the storaged and ageing in oak barrels.
Our Balsamic Vinegar has been produced following the ancestral method of oxidation’s wine and concentrated musts. The grape must variaty of Pedro Ximénez is used. This is, undoubtly, the most appropriate variaty to get the best balsamic vinegars, because of the richness sugars it has and also the aromatic substancies. After the adequate settling period and concentration in oak barrils at wine cellars, under the perfect conditions, we rescue the 13th and 14th centuries Mozarabic tradition.
It is the result of a production process that begins with the selection of ciders from Asturias and oxidation in oak barrels, where it remains for an average of three years, giving it a characteristic discreet acidity (5 degrees) and a very fruity bouquet and aroma, while also providing all the universally recognized and accepted therapeutic qualities of cider vinegar.
